Jetpack plugin references to 3rd party wordpress URLs and hence makes it easy for the detectors to detect that it’s wordpress site. Is jetpack must have plugin for your site? If not then can you please try deactivating it?

But make sure that you completely deactivate/remove HMWP plugin in test site after you have moved to live site.

Regarding builtwith.com, woocommerce is still being detected, may be because the occurrences of word ‘woocommerce’ is there in the site’s page source.
